Rocca di Cioccolato – Chocolate Cake




Surprise your loved one by making this “indulgent” dessert. The most requested dessert at my restaurant and catered events!  It’s dark, luscious, explosive with flavor and when you put the fork inside, it oozes melted chocolate!!  What more do you want?

Rocca di Cioccolato

  1. 1/2 lb dark chocolate 55% chopped
  2. 3/4 cup butter
  3. 1 cup granulated sugar
  4. 3 each eggs
  5. 1 tsp vanilla extract
  6. 3/4 cup all-purpose unbleached flour
  7. 1/4 cup cocoa powder sifted
  1. Cut 6 chunks of chocolate, about 1/2 oz each and put aside.
  2. Using a double boiler, melt the chocolate with the butter.
  3. When melted, remove from heat and add each ingredient one by one mixing well after each addition.
  4. Pour the batter in greased ramequins and put a chunk of chocolate in the center of each one.
  5. Cook in the oven at 370 for approximately 45 minutes.
  6. Serve with fresh whipped cream.
  1. P.S. For Valentine, cook it in heart shaped ramequins!
