Minestrone di Riso

Use this great minestrone recipe as your base; then add your own creativity and favorite ingredients to make the perfect soup for your family and friends!   In Italy this soup is a comfort staple! The flavors and ingredients seem to morph depending on the season, region and the mood of the people!

In Liguria, for instance, they add a heaping teaspoon of pesto which changes the whole flavor of the soup…in a very good way!  My favorite: a few slices of country bread (that has hardened for a day or two) placed into the bottom of the soup bowl, then a heavy pour (not drizzle..) of olive oil.  I finish it off by filling the bowl with boiling minestrone. I let it sit for 5 minutes and  go at it! It creates a delicious,hearty, rich texture.

Ingredients
  1. 1 cup Arborio rice
  2. 1/2 cup olive oil
  3. 1 cup red onions thinly sliced
  4. 1 cup green cabbage cut in 1 inch pieces
  5. 1 cup Cavolo Nero (tuscan kale) thinly sliced
  6. 1 cup carrots cut in small pieces
  7. 1 cup celery cut in small pieces
  8. 1 cup zucchini cut in small pieces
  9. 1 cup potatoes peeled & cut in small pieces
  10. 1.5 cups Cannellini (white kidney beans) cooked or canned
  11. 1 cup canned tomato chopped
  12. 2 1/2 qt vegetable stock or water
Instructions
  1. Cook the rice until al dente in salted, boiling water or in vegetable stock.
  2. Drain the liquid and let it cool.
  3. Pour the oil in a pot and add the onion. Let it braise while stirring, until it reaches a light golden color.
  4. Add the tomato, let it cook for a few minutes. Add the green cabbage and the Cavolo Nero. Braise for a few minutes. Add the stock, just enough to cover the top of the cabbage and let it cook for 5 minutes.
  5. Add the celery, carrots and more stock. After 5-7 minutes add the zucchini, the potatoes and little more stock. Cook for another 5 minutes.

  7. Blend half of the beans with some stock in a blender (or with a hand held mixer) and add it to the minestrone, together with the rest of the beans.
  8. Let it cook slowly until all the vegetables are cooked.
  9. Add the cooked rice and serve.
