“Italian Latkes” with Sweet Potatoes

Frying Sweet Potatoes Latkes

Sweet Potato Ltkes

A fantastic winter holiday dish! A blend of Jewish tradition (latkes), American (sweet potatoes) and Italian (mascarpone and Nutella, anyone…) seamlessly blended into one dish.  The latkes are sweet and crunchy, with a holiday-spice kick! Make sure not to overwhelm them with too much of Nutella….like I do!

  1. 1 Sweet Potato
  2. 1 Egg, beaten
  3. 1 tbsp Brown Sugar
  4. 1 tsp Cinnamon, ground
  5. 1 tsp Cloves, ground
  6. ¼ cup Vegetable Oil
  7. 1/3 cup Macarpone Cheese
  8. 1/3 cup Nutella
  1. Peel and grate the potatoes. Using a towel or a cheese cloth, squeeze the extra water from the grated potatoes.
  2. In a bowl stir together the potatoes, sugar, cinnamon, cloves, egg and a pinch of salt until well mixed.
  3. Heat the oil in a pan over medium heat and spoon the mixture into small patties on the oil. Fry until dark golden and crispy then flip them and finish cooking on the other side.
  4. When ready pat them with a paper towel to get rid of the extra oil and serve hot with the mascarpone and Nutella.
  1. Tip: for a healthier version, cook them on a non-stick pan and skip the oil.
