Arugula Salad with Braised Lentils, Goat Cheese and Pomegranate

- 4-5 cup Wild Arugula
- ½ cup Braised Lentils (see recipe on my recipe page)
- ¼ cup Goat Cheese, crumbled
- ½ Pomegranate Seeds
- 2 tbsp Olive Oil
- 1 tbsp Balsamic Vinegar
- In a bowl mix the arugula, the braised lentils, the oil and vinegar, salt and pepper.
- First, top it with crumbled goat cheese, then finish with pomegranate seeds.
