Arugula “Holiday” Salad

Arugula Salad with Braised Lentils, Goat Cheese and Pomegranate

  1. 4-5 cup Wild Arugula
  2. ½ cup Braised Lentils (see recipe on my recipe page)
  3. ¼ cup Goat Cheese, crumbled
  4. ½ Pomegranate Seeds
  5. 2 tbsp Olive Oil
  6. 1 tbsp Balsamic Vinegar
  1. In a bowl mix the arugula, the braised lentils, the oil and vinegar, salt and pepper.
  2. First, top it with crumbled goat cheese, then finish with pomegranate seeds.
